Using compressed air operated air knives is common for many blow off and cooling applications for a variety of reasons. But one of the nice things about a compressed air operated air knife is its versatility and that it can be controlled easily even to relatively low pressures. In fact, at low pressures, combined with on-off control it can be very economical compared to blowers, even when comparing only energy use.
One bakery utilized a stainless steel compressed air operated air knife to blow off excess sugar from muffins prior to entering an oven on a conveying system. The excess sugar needed to be removed to avoid burning of the sugar in the cooking process, thereby improving the quality of the end product. Because the unit is using very low pressure for the blow off operation (around 20 PSIG) the energy use is very low. By using a sensor to turn off the compressed air flow when the conveyor stops or the muffins are not there, the energy is further reduced – something you cannot do with a blower!.
Another benefit is the incredibly low noise level. Even at 80 PSIG the noise would only be 69dBA. At 20 PSIG the noise is negligible making the factory environment even more pleasant while taking in the aroma of freshly made muffins.
The compressed air operated air knife is virtually maintenance free, compact and with low noise levels and easily controlled to blow off the excess sugar.
